Employment in Polynesia
Polynesia is an area that consists of American Samoa, Chatham, Cook, Easter, Tahiti, Hawaii, Juan Fernandez, Loyalty, Niue, Pitcairn, Samoa, Tokelau, Tonga, Tuvalu, and Wallis and Futuna.  Probably everyone has dreamed of visiting Tahiti at some time or another.  I haven't personally visited the island chain yet, but the photos are simply amazing.  Because of the heavy French influence, it could be hard to get a work visa but its worth trying.  There are jobs in the tourism field (you would have to be bilingual, speaking French) and some ESL jobs teaching English. 

Tonga is another option in this area.  Tonga is made up of over 150 Islands but about 74,000 of its population lives on the main island of Tongatapu.  Since English is one of the main languages, besides Tongan, the opportunities for jobs are better for English speaking people than in Tahiti. 

Probably the best Island chain for Americans to find employment is Samoa.  The Islands lying to the East are commonly known as the American Samoa.  Unless you want to work in the coconut industry, the next biggest money-maker in the Islands is, of course, in tourism.  Job samples include hotel staff, SCUBA jobs, and tour guides.
